Now Add in the carrots, mushrooms, chopped peppers and spices, cook for another minute while stirring. In a medium saucepan, combine oil, garlic, and red pepper flakes and set over medium heat. Add the sweet potato, Brussels sprouts cut side down, chickpeas, and red onion. Evenly drizzle with olive oil, evenly sprinkle with cumin, coriander, turmeric, salt, pepper, and optional garlic. Onions, carrots, and garlic cook in olive oil until buttery soft, then get blended with chickpeas and water to form a deeply savory puree that coats pasta beautifully.
