Instructions to make Pineapple gojju:
- Heat a wide pan,add 3cups of water and add the pineapple cubes, turmeric,curry leaves, Jaggery and salt. Cook on slow flame until the pineapple becomes soft.
- In another pan,dry roast all the ingredients as mentioned above on low flame..until it turns to light brown…when done,switch off the flame and keep aside to cool.
- When cooled,make a fine paste by adding water to it.
- Once pineapple is cooked,add the ground masala over the pineapple and adjust the consistency by adding water and bring it to boil.
- Finally,heat up a tadka pan,add the tempering ingredients to it and pour this tadka over the pineapple gojju/curry
- Pineapple gojju or ananas menaskai is ready to serve.
- Accompanied by hot steaming rice..
- Note- This gojju is medium thick in consistency and you do not need any side dish with it…you can just have it wdh steam rice… that's a soulfood too.
