  8. Get 1 & 1/3 teaspoon Instant Dashi Powder *’Katsuobushi’ type recommended
  9. Make ready 1/3 cup Mirin
  10. Get 1/2 cup Soy Sauce

It is usually used as a dipping sauce for soba noodles or tempura, as a soup base for somen or udon noodles, or is poured over tofu and vegetables. Of course it's great for cold soba noodles or tentsuyu (dipping sauce for tempura). In a medium sized pot heat water, soy sauce, and sugar until it boils. Turn down the heat to medium low and remove any scum from the surface.

Instructions to make 'Mentsuyu' (Noodle Dipping Sauce):
  1. <Popular Method> - Heat Mirin in a saucepan to boil off alcohol. Then add Soy Sauce and bring it to the boil. Add ‘Katsuobushi’ and cook about for a minute.
  2. Add Water and bring to the boil again, then remove from heat. Drain the sauce well. Allow it cool, then chill in the fridge.
  3. <Quick & Easy Method> - Place all ingredients in a saucepan and bring to the boil. Keep boiling for a few minutes. Allow it cool, then chill in the fridge.

In a medium sized pot heat water, soy sauce, and sugar until it boils. Turn down the heat to medium low and remove any scum from the surface. Add bonito flakes and kombu seaweed and again heat until boiling. As soon as it boils turn off the heat. Called 'men tsuyu' in Japanese, this thin, clear sauce is made from dashi soup stock and a mixture of soy sauce, mirin and sugar, which is called 'kaeshi'.
