Kesari is a South Indian sweet made with semolina, sugar, ghee and saffron. A North Indian variation of this kesari is the Suji hawla which is made without kesar/ saffron. It is also known as sheera in some parts of Karnataka and Andhra. Here in suji ka halwa, I have used orange juice for interesting and different taste and used gram flour for crispiness.

The ingredients needed to make Orange halwa:
  1. Make ready 3 cups Freshly squeezed orange juice
  2. Get 1 cup corn flour
  3. Take 1 3/4 cups sugar
  4. Make ready 1 cup water
  5. Make ready 1 tbsp lemon juice
  6. Take 3 tbsp ghee
  7. Take 1/2 tsp orange food color (optional)
  8. Get 1 tsp cardamom powder
  9. Take 1/4 cup Chopped nuts

In the northern part, a similar dessert called sooji halwa. The outcome of this dessert is an energetic orange color that is the reason it's named as Kesari. Mostly Southern people used to make rava Kesari with breakfast especially, during festival seasons.. Orange halua? yes it may sound very weird but trust me once you try this halua, you would fall in love with it.

Instructions to make Orange halwa:
  1. Pour cups of orange juice into the corn flour and mix well.
  2. Mix sugar and water in a sauce and bring to boil.
  3. Add lemon juice.
  4. Mix the cornflour mixture again. Make sure that there is no lumps.and pour it into the sugar syrup and mix it continuously.
  5. After 15 minutes add a tablespoon of ghee and mix it.
  6. Again after 15 minutes add a tablespoon of ghee and food color and mix well.
  7. After 5 minutes add cardamom powder, 1 tbsp ghee and nuts and mix again.
  8. Once it attains a jelly like consistency pour it into a dish brushed with ghee and set it for a couple of hours.
  9. Garnish with nuts and serve.
