  3. Add the peel and bring it to boiling point then reduce it to a simmer and cook for approximately 45 minutes until the orange rind is really soft. If there is any liquid left drain. Mine became gloopy and really sticky so I had to work quickly before it cooled down and hardened.
  4. Line a baking tray with greaseproof paper and add 150g sugar spread out.
  5. Toss the orange rind evenly in the sugar, separating any rinds that are stuck together.
  6. Transfer the coated rind to a tray lined with foil.
  7. Cover the tray with a tea towel and let it dry for 1-2 days. Then place in an airtight container and enjoy.

Using a vegetable peeler, remove the outer peel of each orange, working from stem end to blossom end; think about following the longitude lines on a globe. Lay each piece on a cutting board, pith (the white stuff)-side up. Use a paring knife to scrape off as much of the pith as possible. An excellent appetizer for Christmas or any other party!
