The main ingredient is Milk (Whole milk or full-fat milk) which is thickened slowly on low flame till it is very thick. During the simmering process, the cream layer is formed on top. That is collected by sticking to the sides of the pan. In the end that collected cream is added back to the thickened milk.

Steps to make Rabdi Recipe:
  1. Take 5 cups of full fat whole milk in a kadhai & heat the milk on a low to medium flame, till the milk starts to form a layer of cream/malai on top.
  2. When you will see the cream floating on top, then with a spatula, gently move the cream layer and bring it towards the side of the pan and stick it to the pan. This process of collecting the cream has to be done many times.
  3. Add cardamom powder & 10-12 strands of saffron. Mix it slowly.
  4. Stir the milk gently on occasions, so that the milk does not get burnt from the bottom.
  5. Add almonds & cashew nuts. Then mix it well.
  6. Keep on simmering the milk and collecting the cream layer on the sides and sticking it to the pan.
  7. Add sugar.
  8. When the milk has got reduced to 1/4 cup of it's original volume. Switch off the flame.
  9. Add rose water. Then garnish with raisins.
  10. Add some cherries.
  11. Now ready to serve.
