In a medium saucepan, cook couscous according to package instructions. In a large bowl, combine couscous, avocado, corn, strawberries, cilantro and pine nuts.   1. Place the couscous in a bowl, add a teaspoon of salt. Pour over 1.2 times its volume of boiling water. Stir well, cover and leave to stand for 5 minutes.

  3. Check the couscous, and when it is cooked, leave it 10 min for chill.
  4. When the couscous is chilled and ready mix everything.in a big bowl. Add olive oil and any desired dressing like e.g. balsamic vinegar

Remove the couscous from the heat, add avocado. Sprinkle pistachios over the couscous (if using). *Large avocados are recommended for this recipe. Peel and stone the avocado and cut into chunks. Mix together the avocado, chickpeas and pepper and add to the couscous. Split the pomegranate and remove the seeds.
