Start the soup in a big pot, first sautéeing a couple inches or so of ginger, thinly sliced, in your favourite fat or cooking oil (I use ghee). Using a slotted spoon, reserve about a mugful of the vegetable pieces. Blitz the remainder of the soup until smooth, roughly chop the reserved pieces and add to the soup to give some texture. Serve with a swirl of cream stirred through just before serving, with plenty of crusty bread or with open sandwiches.

As the vegetables have already cooked for a couple of hours, the flavour adds a delicious richness to the soup which can be knocked together in no time at all. Instructions to make Boxing day soup:
  1. Chuck the vegetables into a saucepan, add stock. N.b. an English quart is 40 fl oz not 32!
  2. Put on lid, bring to boil, lower heat and simmer for 15-20 minutes. Stir regularly.
  3. Blitz with a hand held blender, or in a liquidiser, until as smooth as you like
  4. Bring back to boil, stirring constantly, it sticks and burns, very quickly. Check seasoning and add salt and pepper to taste, I like lots of black pepper!
  5. Serve. You can drizzle in cream or creme fraiche, add croutons
  6. The soup pictured contained roast potatoes, candied sweet potatoes, peas, sweetcorn, carrots, broccoli and greens. You can make from scratch with fresh vegetables but it doesn't taste as good.
  7. Just ate the pictured bowl for breakfast, straight after I made the soup and photographed it! 9 am here in U.K.
