The ingredients needed to make Field of Vision:
- Prepare Jackson granola
- Make ready 90 g (1 cup, 3 oz) jumbo rolled oats
- Prepare 90 g (1/2 cup, 3 oz) dried apricots, chopped
- Take 30 g (1/4 cup, 1 oz) unsweetened dried cranberries
- Prepare 30 g (1/4 cup, 1 oz) mixed seeds such as pumpkin, sunflower and brown linseed
- Prepare 20 g (1/8 cup, 0.7 oz) pecans, chopped
- Prepare 20 g (1/8 cup, 0.7 oz) almonds, chopped
- Get 15 g (1/8 cup, 0.5 oz) flaxseeds
- Get 15 g (1/8 cup, 0.5 oz) coconut, chopped
- Get zest and juice of 1 orange
- Get zest of juice of 1 lime
- Take zest of juice of ½ lemon
- Prepare 1 tsp agave or date nectar or honey
- Take 1-2 tsps ginger powder
- Get 1/2 tsp vanilla extract
- Get few drops of elderflower (optional) extract
- Make ready Peg's orange or lemon cheese
- Make ready zest and juice of 2 medium oranges OR 2 large lemons
- Take 4 large organic egg yolks
- Prepare 90 g (1/2 cup, 3 oz) caster sugar
- Get 40 g (1/4 cup, 2oz) unsalted butter, cubed
- Take to serve
- Get big dollop of proper Icelandic skyr
- Get edible flowers
A visual field test is a method of measuring an individual's entire scope of vision, that is their central and peripheral (side) vision. Visual field testing maps the visual fields of each eye individually and can detect blind spots (scotomas) as well as more subtle areas of dim vision. Visual field testing is one way your ophthalmologist measures how much vision you have in either eye, and how much vision loss may have occurred over time. A visual field test can determine if you have blind spots (called scotoma) in your vision and where they are.
Steps to make Field of Vision:
- Preheat the oven to 150 degrees C/Gas mark 2/300 degrees F. Combine all the granola ingredients in a large bowl, stir well and spread onto a 9” x 13” (33cm x 23cm) baking sheet. Bake in the oven for 15 minutes.
- Stir and bake for another 15 minutes until it has taken on a light golden hue and smells nutty. Remove from the oven and allow the granola to cool to room temperature.
- Meanwhile make the orange or lemon cheese. Mix all the ingredients in a large heatproof bowl and suspend over a pan of simmering water ensuring that the base does not touch the water.
- Stir constantly for around 20 minutes; the butter will melt, the sugar will dissolve and it will thicken. Keep stirring until it becomes viscous enough to coat the back of a spoon and leave a track when swiped.
- Don’t worry about it not being set as it will thicken more as it cools. Take off the heat. If you prefer a silky smooth texture pass through a sieve otherwise leave as is. Place in a steralized jar and let it cool to room temperature before placing in the fridge to set.
- Place granola and skyr in a bowl, add a swirl of orange or lemon cheese and top with edible flowers.
