- Preheat oven to 60C - 75C.
- In a pan, heat the apricots, lime juice and water on a medium-high heat. Bring to a boil.

- Simmer for about 10 mins.
- Put the mix in the blender and blend for a minute or so til smooth.

- Bake for about 4 hours. The paste dries out but needs to be slightly sticky when you touch it.
- When it’s ready, cut (with scissors) the paste/ paper into strips. You can roll the paste while still on the paper - or take it off first and then roll.
- Peel the fruit off the paper and enjoy 😍 Keep in an airtight container in the fridge… if you don’t finish it off immediately!
