- Fry the chops till done and set aside. Remove most of the oil except 1/3 cup leave it in the skillet for the tomato gravy
- Fry the onion in the oil and skillet you fried the chops in
- Add the tomato to the onions season and add the flour
- Simmer stirring occasionally and taste, if a little salty you got it right, set aside.
- Mix the buttermilk, flour, and sugar make a batter pour on the hot skillet and cook them as you would regular pancakes. These will be small ones
- Heat the Canadian bacon. Cook the eggs I scrambled these.
- Plate serve I hope you enjoy!! The pork chops can be substituted with steak, fish, or chicken.
