- Add sugar and beaten egg to fruit. Mix through. Add flour, mix through. Add to tin and level top. Sprinkle with Demerara sugar. Cook for 50mins. Test with skewer should come out clean.
- Leave in tin for about 10mins. I leave the liner on the loaf. When cool wrap in foil. Will keep for about a week. Good as it is or with butter.

Butter and flour the inside of a loaf tin and set aside. Place the fruit mixture into a large bowl and add the beaten egg, flour and baking powder and mix until well combined.
