Instructions to make Pizza Sauce:
- Slit x on tomatoes and add in to boiling water for two minutes.
- After strain it peel the skin of tomatoes and blend to smooth puree.
- Heat oil in a pan.
- Add grated garlic in it and saute till it become golden.
- Add onions in it and saute them till they become transparent.
- Add tomatoes puree in it and cook for five minutes.
- Add salt and pepper, oregano, chilli flakes, basil leaves in it and mix well.
- Add vinegar and tomato sauce in it. Mix properly.
- Cook the sauce five minutes more.
- It's ready.
The main difference is that pizza sauce is raw, whereas pasta sauce is cooked. In the region where my mother is from, oregano is for pizza sauce, not pasta sauce. Also, don't believe for a minute that either one should be "thick" or "heavy." If you end up with a thick pizza sauce, you're not making anything remotely Italian. Pizza sauce is thicker. this goes along with the point above, but pizza sauce contains tomato paste, which causes it to spread easier and more evenly! This might be my own opinion, but we like a lot more spices in our pizza sauce than we do in our spaghetti sauce!
