Place ingredients (except for parsley and green onions) into blender or Vita-Mix and blend until smooth. Taste and adjust salt and pepper if desired. Add parsley and green onions and blend on. Add the tofu, nutritional yeast, white miso, vinegar and salt to a blender.
Instructions to make Tofu dip:
- Drain the tofu and put in a medium bowl. Using a whisk, mash and mix until the tofu is fairly smooth.
- Add the oil and soy sauce. Mix and adjust taste if needed.
- Try adding fresh chopped herbs, lemon zest, smoked paprika, roasted garlic, etc, etc. For salad dressing, mix with a little vinegar or lemon juice. You can do a lot with this dip!
Add parsley and green onions and blend on. Add the tofu, nutritional yeast, white miso, vinegar and salt to a blender. Take the roasted garlic head and gently squeeze the garlic out of the papery skins and into the blender along with half of the onion and a few drops of the milk. Silken Tofu and Sun-Dried Tomato Dip makes a delicious appetizer, served with whole grain crackers and raw veggies. It's also wonderful as a spread for sliced fresh baguette.
